African & Intercontinental delicacies with Akanimoh Joseph

Akanimoh Joseph is in the house today…yipeeee. I have heard so much about her cooking skills that’s why I am excited she is finally here.  She is sharing a great recipe with us on Yspot! You don’t want to miss this. It’s really mouth watering……wink.

Vegetable Rice
Ingredients
Rice (for four)
Green pepper (1 medium sized)
Carrots(4 medium sized)
Onions (1 medium sized bulb)
Tiger prawns(2 pounds)
Cucumber
Salt
Seasoning
Chicken stock
Spice for rice(optional)
Liver (1/2 pound)
Fresh pepper
Groundnut oil(1 cooking cup)

Method
1.      Parboil rice
2.      Add spice to rice(optional)
3.      Heat a sauce pan and add one cooking cup of groundnut oil
4.      Add shredded onions, tomatoes, grounded fresh pepper. Allow to simmer  for 2mins




1.      Add already cooked tiger prawns and diced liver. stir and allow to cook for 5minutes
2.      Add your chicken stock, seasoning and salt to taste. Let it simmer for a minute
3.      Add your diced carrot and green pepper. Stir and allow to simmer for 15 minutes


1.      Empty the contents of the saucepan into the pot of parboiled rice and stir with a wooden spatula
2.      Cover the pot and allow it dry out. Add water to the rice to get the softness you desire
3.      Serve and garnish with cucumber


  And we are ready to eat…….lol
