Last week we visited the Northern part of Nigeria. Well today we heading for the Eastern part of Nigeria to learn a special delicacy known as BREADFRUIT  PORRIDGE (Ukwa).

Breadfruit is a remarkable food. The prickly football-size pod is full of nutrients and energy. Breadfruit seed is scientifically known as Artocarpus Camans. It is highly sought after owing to its medicinal properties. Breadfruit porridge is one of the diabetic healthy foods that is prepared and eaten to help control blood sugar level. Breadfruit porridge is also an ideal food for maintaining healthy eyes, skin and for boosting the body’s resistance to infections and disease (builds a strong immune system).


This dish provides the body with essential nutrients like protein, omega -3 fatty acid, vitamins C, A, K, iron, omega – 6 fatty acid, calcium, potassium, magnesium, riboflavin, niacin, folic acid, carotenoid, flavonoid and fibre. Apart from being a healthy and nutritious food for diabetics, those that have high triglyceride (high fat in the blood) and high cholesterol level (hypercholesterolemia) can benefit from eating this nutritious food.






Recipe

·        4 cups of breadfruit (Peeled)
·        A spoonful of palm oil (red oil)
·        One onion (medium size)
·        A pinch of salt
·        Fresh pepper (blended)
·        1-11/2 cup of corn (optional)
·        Dry fish (salty, finger-like type)
·        Blended or grounded crayfish (an ounce)
·        Magi to taste
·        Potassium solution (either from kanwu) or burnt (ashes) from palm oil tree
·        A litre of water (sachet water measurement)

       
   HOW TO COOK
·        De-husk your corn and bring to boil until soft. Strain from water and keep covered in a dish.
·        Add the water to a pot and bring to boil. Add the properly washed breadfruit seeds to boiling water. Avoid stirring until its boiled for 30 minutes.
·        To enhance softening, add a little quantity of the potassium solutions to the boiling breadfruit. Do not stir and cover to continue boiling.
·        After 20minutes add the crayfish, dry fish, pepper and onions. Stir properly. Allow to boil.
·        Add the cooked corn to the mixture in addition to the salt and maggi.
·        Once the water is dried and the consistency of the mixture is set add the palm oil, stir and stop cooking.
·        Serve alone or topped with vegetable sauce.
