Hi everyone, Good morning! Its Nigerian & Inter-continental delicacies on Yspot! With Ezine Uvere

Last week we visited the Northern part of Nigeria. Well today we heading for the Eastern part of Nigeria to learn a special delicacy known as BREADFRUIT  PORRIDGE.

I hope you've eaten 'cos this is mouth-watering.... Enjoy!

Breadfruit (Artocarpus altilis) is a remarkable food. The prickly football-size pod is full of nutrients and energy. Breadfruit is very rich in starch and is typically consumed when mature, but still firm, and is a delicious substitute for any starchy root crop, vegetable, pasta, potato, or rice. Mature breadfruit can be boiled, steamed, or baked and replace potatoes in many recipes. Small, immature fruit can be boiled, pickled or marinated. When cooked, the taste of moderately ripe breadfruit is described as potato-like, or similar to fresh-baked bread. Very ripe breadfruit becomes sweet, as the starch converts to sugar.

Interestingly, Breadfruit can be cooked and eaten at all stages of development. It contains roughly 25% carbohydrates and 70% water and has an average amount of vitamin C (20 mg/100 g), small amounts of minerals (potassium and zinc) and thiamin (100 μg/100 g).

Don’t you just love the serving spoon ?

Recipe

·        4 cups of breadfruit (Peeled)
·        A spoonful of palm oil (red oil)
·        One onion (medium size)
·        A pinch of salt
·        Fresh pepper (blended)
·        1-11/2 cup of corn (optional)
·        Dry fish (salty, finger-like type)
·        Blended or grounded crayfish (an ounce)
·        Magi to taste
·        Potassium solution (either from kanwu) or burnt (ashes) from palm oil tree
·        A litre of water (sachet water measurement)

   HOW TO COOK
·        De-husk your corn and bring to boil until soft. Strain from water and keep covered in a dish.
·        Add the water to a pot and bring to boil. Add the properly washed breadfruit seeds to boiling water. Avoid stirring until its boiled for 30 minutes .
·        To enhance softening, add a little quantity of the potassium solutions to the boiling breadfruit. Do not stir and cover to continue boiling.
·        After 20minutes add the crayfish, dry fish, pepper and onions. Stir properly. Allow to boil.
·        Add the cooked corn to the mixture in addition to the salt and maggi.
·        Once the water is dried and the consistency of the mixture is set add the palm oil, stir and stop cooking.
·        Serve alone or topped with vegetable sauce.
Give it a try! I'm sure you will glad you did.
